Not every tuber is planting material

Smooth, thick storage roots are edible. New planting material usually comes from budded crowns or rhizomes. Ask what is supplied. After harvest, photograph both parts labelled together to avoid eating crowns or saving budless edible roots expecting new plants.

Try it as a fresh vegetable first

Thinly slice a healthy cleaned and peeled root for a small trial. Its juicy bite is much less starchy than potato. Compare cultivars fairly with similar harvest timing and storage. Cultivariable and Rutgers did not report the same flavour ranking under their different conditions. This is reason to record your own experience rather than promise one selection is always sweeter. Treat yacon as a garden and kitchen discovery; unchecked health claims add no reliable information.

Scent, flavour and use

Crop flavour: juicy, crisp and mildly sweet, with comparisons to apple, pear and celery. Storage can change sweetness. Nursery comparisons between cultivars are context-dependent, not a guaranteed result in your garden.

Care, cutting and harvesting

Use a healthy crown or propagation tuber with growing points, not just a smooth edible root. Start frost-free and plant after the risk of frost in a spacious sunny patch. Maintain moisture without permanently wet soil.

Retain healthy foliage for growth; no fixed pruning calendar. Store the crown frost-free according to the growing instructions.

Let the plant grow as long as possible, but harvest before a hard freeze. Lift the root cluster generously and carefully to limit breakage. Separate edible roots from the crown with growing points retained for replanting.
