Long Yellow: smaak en teelt

No climbing beans or potato foliage

Ulluco is Ullucus tuberosus, in the Basellaceae. Its succulent leaves and spreading stems belong to a different crop from potato. Do not describe it as a twining climbing bean: the usual cultivated form stays low and spreads. Choose a clearly bounded location to find small tubers at harvest. Label a purchased selection immediately; a yellow tuber alone does not prove its cultivar name.

Start with brief cooking and comparison

Ulluco's high moisture content and firm bite differ from floury potato. Try a small cleaned, cooked portion in a dish welcoming texture. The beetroot-like nuance varies; yellow colouring does not automatically make it weak or strong. Cusco Market and Long Yellow have similar colours, but shape and supplier names help separate trials. Photograph them with labels and record preparation. A failed late harvest is a climate experience, not proof the whole species cannot grow anywhere.

Scent, flavour and use

Crop flavour: mild earthy to beetroot-like notes, depending on the selection; the texture stays firmer and may feel somewhat smooth or slimy. No separate flavour ranking is confirmed for the two yellow selections chosen here.

Care, cutting and harvesting

Start healthy planting tubers frost-free and place them in a well-drained, sufficiently moist position after the risk of frost. Avoid overheating the trial pot and watch young growth for slugs and snails.

No fixed pruning task: let the healthy spreading plant grow and keep the edges accessible.

Allow enough time for late tuber formation and harvest before the tubers freeze severely. Keep healthy small planting tubers identifiable, separate and frost-free.
