Use
This guide chooses ornamental and cut-flower use and makes no cultivar-specific flavour claim. It does not assume that every Centaurea species has the same edibility.
Care
Sow Centaurea cyanus in spring in sun and well-drained, weed-free soil. Thin according to the final plant size on the packet. Prevent taller neighbours from overgrowing the strip. In a windy spot, use twiggy sticks or light support netting for taller stems.
Harvest and flowering
Cut fresh flowers for small bouquets and place them straight into clean water. To save your own seed, let a few heads dry on the plant. Collect dry seed with the cultivar or mixture name. Due to cross-pollination and mixtures, saved seed may not produce an exact copy of the parent.

For regular small bouquets.

Blue is only the beginning

Ordinary Centaurea cyanus gives the classic blue field effect. Black Ball is a named dark selection: the colour appears very dark reddish-purple rather than perfectly black. Snowman brings white. Plant these three in small separate groups so you can see the difference later instead of giving every seedling from one mix the same name.

A picking strip with a view of the bed

A gentle colour story
