A small trial reveals differences

Oca is Oxalis tuberosa, not a yam or ordinary potato. Choose two clearly labelled selections and give them comparable space. This shows which uses late autumn well in your location. A grower's description from Wales or the Pacific Northwest is useful inspiration, but does not guarantee your first frost arrives as late. Note foliage dieback and tuber harvest.

Let colour and flavour speak separately

Wash tubers carefully and try a small cooked portion beside ordinary potato. Their freshness can give roasted vegetables a different accent from a floury storage potato. Give each selection its own container to retain cultivar identity. Do not judge flavour from a photo alone: size, storage and preparation alter experience. Keep healthy propagation tubers separate and frost-free; a fine harvest without planting material does not automatically yield another crop.

General crop flavour: refreshingly tart, often compared with potato with lemon. Preparation, cultivar and storage affect acidity; colour alone does not predict a flavour ranking.

Care, cutting and harvesting

Start healthy small planting tubers frost-free and plant out only after the risk of frost has passed. Provide a sunny position that stays moist but drains well, with enough space for the spreading crop.
