This image was created with AI from described plant characteristics and growing advice. It shows a possible situation and is not a photograph of a verified cultivar.

Use
Strongly resinous, woody and pine-like. According to the RHS, Green Ginger has a ginger-like scent; do not assign an unproven distinct flavour profile to other cultivars.
Care
Sunny, sheltered and very well drained. Pots can be protected in severe cold; wet winter soil is a major risk.
Harvest and flowering
Cut small, young, green shoots from an established plant. Tough wood is not a pleasant leafy garnish.

A trailing potted form

An upright plant in a dry border

Rosemary offers much more than one upright little shrub: an upright form can give a herb garden structure, a trailing selection tumbles over a pot edge and a gingery scent makes smelling it interesting again. Choose the shape you want first, then its kitchen use.

  1. Choose an upright variety and a sunny, sheltered position with good drainage.
  2. Plant at nursery-pot depth and water until established.
  3. Cut only small, green, young shoots for the kitchen.
  4. Trim lightly after flowering to retain shape and avoid bare old branches.

For an identifiable harvesting spot with enough room for this growth habit.

A trailing potted form

A decorative pot is only useful if water can drain freely. Check drainage holes and do not leave the pot in a full saucer all winter. A sheltered, bright position makes assessment easier. Move a young potted plant in good time when a severe cold spell is forecast rather than waiting for visibly damaged leaves.

  1. Plant a trailing variety such as Capri in a freely draining pot.
  2. Place the pot high enough for stems to hang over the rim.
  3. Check the rootball and do not leave the pot standing in a wet saucer for long.
  4. Protect against severe cold and wet winter weather in light, sheltered conditions.

For a second growing position where you can compare shape, scent or harvesting rhythm.

How to create your own herb-growing space

Place upright rosemary at the back of a herb container and a trailing form in a tall pot. That difference is visible without forcing the plant into an unnatural shape. You can add Green Ginger as a small trial plant. Rub a leaf between your fingers first and compare its scent with the basic form.

From plant to kitchen

Snip small green tips as needed and watch where the plant makes new shoots. When pruning more heavily, living growth must remain visible. An old, bare branch is not a reliable starting point for regrowth. If desired, take a cutting from a healthy plant in good time, so you can replace a favourite form without a drastic rescue cut.

Plan the next harvest

Taste rosemary with a small portion of roast potato. The combination makes a resinous aroma easy to recognise, but use little initially. A selection with a different flower colour need not be presented as a new culinary flavour cultivar; the flowers already make it a distinct garden experience.
